Tofu Kebabs

½ cup of vegetable broth
2 tbsp soy sauce
2 tbsp honey
1 tbsp grated fresh ginger or
1 tsp ground ginger
1 clove garlic minced
1 tsp lemon juice
1/4 tsp red pepper flakes crushed
½ package herb or garlic Soy Hardy Ltd tofu
8 cherry tomatoes
4 large mushrooms cut in half
1 green bell pepper cut into 8 squares
1 small zucchini cut into 8 squares

Cut tofu into cubes

In shallow glass dish combine the first eight ingredients. Mix well.

Add vegetables and tofu, stir to coat well. Cover and refrigerate for 2 hours.

Stir occasionally to make sure all ingredients are marinating in sauce
Using 4 - 10 inch skewers alternate tofu and vegetables on to the skewer.

Baste with remaining marinate.

Cook under broiler for about 10 minutes turning two or three times or BBQ on grill.

Kebabs can be basted again will cooking with any remaining marinate.

Tip
If desired tofu can be marinated in chicken or beef broth over night.

Remaining marinate can be thicken with a little corn starch and cooked in the microwave to make basting easier while grilling kebabs.



Cooking with Tofu

Tofu is a versatile product. You can slice, cube or crumble tofu and add it to almost any dish. If you are going to use tofu with, or instead of ground meat, you will need to remove some of the water. Wrap the tofu in a clean dishcloth and press down firmly to remove the excess moisture. Then crumble the tofu and fry with your ground meat. You can also marinade tofu! Try soaking the tofu in beef or vegetable bouillon overnight (for best results). Then cook as desired the next day!

Storing Tofu

If your tofu is refrigerated, sealed in its original packaging, it will stay fresh until the 'best before' date. If you have leftover unused portions, you can refrigerate it or freeze it.

To refrigerate, keep the leftover portions submerged in water. You will need to change the water every two days and use the tofu within one week. If the week is almost over and you have not yet used the tofu, try boiling it in water for 20 minutes. This will make the tofu fresher and give it a chewier texture.

Tofu can be frozen to extend shelf life. To freeze it properly, tightly wrap it in plastic and place the tofu in the freezer. Used unthawed tofu within 2 days. When you thaw the tofu, it will crumble easily. Try using the crumbled tofu with, or instead of ground meat.
