Tortellini Tofu Salad

½ package of Soy Hardy Ltd firm tofu
½ tsp olive oil
½ cup honey dijon salad dressing
3 cups cooked cheese filled tortellini
2 cups broccoli florets cooked
1 ½ cups sliced mushrooms
1 ½ cups cherry tomatoes (halved)
1 cup chopped zesty dill spears
Fresh chopped basil for garnish

Cut tofu into small cubes and place in shallow dish. Cover with salad dressing. Let marinate for 1 hour in refrigerator.

Heat oil on medium heat in non stick skillet, add marinated tofu and brown cubes on all sides

In large bowl combine tortellini, broccoli, mushrooms, tomatoes, pickles and left over marinate. Add tofu and toss until well coated. Cover bowl and refrigerate for at least 4 hours.

Using slotted spoon place salad on plate and garnish with basil.

Tip
This dish is excellent as a main meal served with garlic toast or it can be used as a side salad.



Cooking with Tofu

Tofu is a versatile product. You can slice, cube or crumble tofu and add it to almost any dish. If you are going to use tofu with, or instead of ground meat, you will need to remove some of the water. Wrap the tofu in a clean dishcloth and press down firmly to remove the excess moisture. Then crumble the tofu and fry with your ground meat. You can also marinade tofu! Try soaking the tofu in beef or vegetable bouillon overnight (for best results). Then cook as desired the next day!

Storing Tofu

If your tofu is refrigerated, sealed in its original packaging, it will stay fresh until the 'best before' date. If you have leftover unused portions, you can refrigerate it or freeze it.

To refrigerate, keep the leftover portions submerged in water. You will need to change the water every two days and use the tofu within one week. If the week is almost over and you have not yet used the tofu, try boiling it in water for 20 minutes. This will make the tofu fresher and give it a chewier texture.

Tofu can be frozen to extend shelf life. To freeze it properly, tightly wrap it in plastic and place the tofu in the freezer. Used unthawed tofu within 2 days. When you thaw the tofu, it will crumble easily. Try using the crumbled tofu with, or instead of ground meat.
