1 package of cake mix any flavor
1/4 cup of Soy Hardy Ltd firm tofu
Place tofu on paper towels and squeeze out excess water.
In a large cup measure water from recipe on box. Add tofu and mix with stick blender until tofu and water are completely mix together. It should look like milk. Follow recipe on box to complete leaving out the oil and eggs. You will probably have to add more water since you are taking out the liquid. Add water a little at a time until the cake mix is the same consistency it would if eggs and oil were left in.
