Helpful Hints When Using Tofu

Tofu can be used with any ground meat. By add tofu to ground meat you can make your meat go farther and it also adds extra protein and calcium to your meat.

Tofu is like a sponge. It has the ability to take on the flavor of what you mix it with. If you are adding it to meat it will taste like what ever meat you are using.

If you freeze your tofu before you use it in meat dishes or eating alone it will take on a more meatier texture.

Tofu can be cut into cubes and marinated in chicken beef or pork flavorings. After they are marinated for 2 hours or more. Drain tofu, store in air tight container and freeze for easy use in recipes.

Tofu cubes can also be coated with bread crumbs, shake & bake coatings or your favorite dressings then browned in skillet. This cubes can be frozen and thawed and use with any recipe.

Tofu can be used in baking recipes in replacement of eggs and oil. When you use tofu for baking you must squeeze out the water by placing between paper towel or a clean tea towel. Squeeze until dry. You will need to add more water to your recipe since eggs and oil are liquid and you are replacing it with a dry ingredient. Add water a little at a time until you get the desired consistency of your original recipe.

When replacing eggs with tofu, regardless of how many eggs in your recipe, only use a piece of tofu the size of one large egg yolk.



Cooking with Tofu

Tofu is a versatile product. You can slice, cube or crumble tofu and add it to almost any dish. If you are going to use tofu with, or instead of ground meat, you will need to remove some of the water. Wrap the tofu in a clean dishcloth and press down firmly to remove the excess moisture. Then crumble the tofu and fry with your ground meat. You can also marinade tofu! Try soaking the tofu in beef or vegetable bouillon overnight (for best results). Then cook as desired the next day!

Storing Tofu

If your tofu is refrigerated, sealed in its original packaging, it will stay fresh until the 'best before' date. If you have leftover unused portions, you can refrigerate it or freeze it.

To refrigerate, keep the leftover portions submerged in water. You will need to change the water every two days and use the tofu within one week. If the week is almost over and you have not yet used the tofu, try boiling it in water for 20 minutes. This will make the tofu fresher and give it a chewier texture.

Tofu can be frozen to extend shelf life. To freeze it properly, tightly wrap it in plastic and place the tofu in the freezer. Used unthawed tofu within 2 days. When you thaw the tofu, it will crumble easily. Try using the crumbled tofu with, or instead of ground meat.
